Fluffy Delicious Pancakes

These are the most tasty and fluffy pancakes I have ever made. You and your family will love them.

Here’s how I make them. First I gather all my ingredients.

Yes I add nuts to mine sometimes, of course this is completely optional. I also add a little lemon juice if making blueberry pancakes. Makes the flavor pop. Again, what you add or don’t add for optional ingredients is up to you.

Next I mix up the ingredients. This takes 2 bowls one for wet, one for dry.

Then you combine the two by pouring the wet over the dry and mix to combine, but don’t over stir.

Then get your griddle nice and hot with some butter on it.

I drop my batter on and then place my toppings on the pancake so then I can change up for each person…some like chocolate chips, some like plain, some the fruit. Makes it easier to cater to different tastes with one bowl of batter.

Flip them when they are bubbly. When you serve these up, they taste best with real maple syrup. Just trust me on this. I have my friend bring me some from NH when she comes down to visit me in Florida!

Recipe for Fluffy Pancakes: (this recipe makes enough for 2 people you will want to double it for a family of 4)

Mix Dry ingredients in medium sized bowl

  • 1 Cup Flour
  • 2 TBL White Sugar
  • 2 teaspoons of Baking Powder
  • Pinch Baking Soda
  • Pinch Salt

Mix wet ingredients in large size bowl

  • 1 Egg
  • 3/4 Cup of Milk or Buttermilk
  • 4 Tablespoons Butter- Melted
  • 1 teaspoon of Vanilla Extract
  • 1 teaspoon of Lemon Juice (optional)

Add ins of your choice: Blueberries, Chocolate Chips, Coconut, Walnuts, Pecans, Banana

Cook a scoop of the batter on a buttered griddle, flip when bubbly. You may add your mix in to all the batter, or add to each pancake on the griddle before flipping.
